Covid Health tip
Thoughts on Covid-19 and Immunity

The world is currently facing the COVID-19 pandemic that is taking a heavy toll on several countries, including Australia. While many infected patients have a good prognosis, in some cases the progression can be serious and even lead to death. The commonly seen complications are a massive immune challenge and multi-organ failure that require intensive care.

Recently we read about a fully vaccinated couple, who share the same bed, one who has had suffered Covid infections on two occasions whilst her partner has remained immune to the disease.  Similar situations have been reported worldwide and are being studied by numerous research groups to find possible reasons.  Some promising research on the effect of short chain fatty acids and the strengthening of the immune system has come to my attention.

Short-chain fatty acids namely, acetate, propionate and butyrate, are produced in the gut from the fermentation of non-digestible starches and dietary fibers.  Previous studies have reported that short chain fatty acids protect against infections ranging from a direct effect on the growth and virulence of microorganisms to an indirect effect on the host immune system.

In a recent study, scientists from the University of Fukui, Japan, led by Dr. Tetsuji Takabayashi, have shown that the short-chain fatty acid, butyrate, was found to protect the host from viral infection via down-regulating genes essential for Covid infection in the nasal passage.  These results suggest that short chain fatty acids have potential therapeutic applications against COVID-19.

How you can produce Short Chain Fatty Acids yourself - make Fried Rice

As strange as it may sound, when rice is cooked and cooled, the starch resists digestion and becomes a  source of short chain fatty acids.  But first, what is resistant starch?  It's cooked rice that’s cooled or refrigerated and then not reheated above 100°C, as in producing fried rice.  As the rice cools, its starch crystalizes into a form that resists digestion in the stomach and small intestine, but is fermented in the large intestine producing short chain fatty acids..

Resistant Starch is good for you

·    Strengthens the immune system by transforming starch into short-chain fatty acids, in particular butyric acid (butyrate), which boost the growth of probiotics.
·    Reduces appetite to give a sense of fullness and so it helps treat obesity.
·    Improves insulin sensitivity and lowers blood sugar level and so helps treat and prevent diabetes.
·    Reduces intestinal permeability (leaky gut) and inflammation in the large intestine.
